🛒 Ingredients:
• 1/2 cup pasta (fusilli, penne, or spaghetti)
• 1/2 cup mushrooms (sliced — cremini, button, or mixed)
• 1 small garlic clove (minced)
• 1/2 cup baby spinach
• 1/3 cup oat milk or regular milk
• 1 tbsp cream cheese or vegan alternative
• Salt & pepper to taste
• Olive oil or butter for cooking
• Optional: a squeeze of lemon + nutritional yeast or parmesan

1. Cook the pasta:
Boil in salted water. Reserve 1–2 tbsp of pasta water before draining.
2. Sauté mushrooms:
In a skillet, heat olive oil. Sauté mushrooms and garlic until golden and fragrant (5–6 mins).
3. Make it creamy:
Add milk, cream cheese, salt, pepper, and spinach. Stir until spinach wilts and sauce thickens (2–3 mins).
4. Combine:
